It was really great to be able to go into a restaurant Paul was working in and for him to make a vegan meal within minutes for me. I feel a lot of chefs will turn their nose to making plates thay aren't on the menu but not Paul. He is very knowledgeable on how to pair flavors and how to not overdo oils and salt.
