This was an awesome concept we found driving through the Albany area. A quesadilla bar You had me at cheese!!!The staff was very nice and the service was perfect. It's a casual, counter service restaurant with Star Wars cartoons playing on a wall via projector. The restaurant is clean and spacious.The food was excellent and perfect for the variety of tastes in my family. Everyone got what they wanted and it was reasonably priced. We ordered a signature menu item, a vegetarian quesadilla that was big enough to share. The kids meal was substantial enough for a single kid and came with a drink and dessert. I totally recommend!!! I went here with four of the loudest people I know, and the food was so good it silenced everyone for 10 minutes. Seriously the best quesadilla I've ever had. Cannot recommend enough.

What a delicious gem in the area! My group and I stopped by here two days ago for quesadillas after a camping trip. The staff is cordial and patient, and the quesadillas were filling and well-priced. Food: Great! First of all, the menu has a great selection of premade choices and make-your-own. I chose to make my own, and the food came out to roughly $8 with an extra filling. The tortilla is soft but crispy, and the insides are not too greasy or too watery. Sauces came out okay, the muddaddy sauce (a red pepper sauce) does not add substantially to the flavor. The portion was nice, and one tortilla was enough to satisfy my hunger.Space: plenty of seating for lunch at 1pm on a Friday. Our group was 12 people and there was enough room for us to all sit down immediately. The place is clean and friendly, with two gender neutral bathrooms. Would recommend! Go there because they have gluten free options. Tacos were great but wasnt a fan of the quesadilla I got. Will have to try another because I had a good one at their booth at a downtown event. The owner is very nice and accomodating. The other people working in the store were not very attentive and I was disappointed by their customer service. I waited for a while for my food and it was sitting in front of them the whole time and they didnt even realize to bring it to me. Another girl was there on her day off eating at the front with her back to customers. That is not very appropriate if she cannot help them.. They need some customer service training in those areas. My husband and I passed through Troy, NY on our way from VT to DC, and were thrilled to find this spot. As vegetarians, we were losing hope of finding something good for lunch, but Muddaddy's did not disappoint. We ordered the smokey tofu tacos and the very veggie quesadilla. Both were delicious, but I *especially* enjoyed the tofu (it honestly seemed like meat to me and I'm always thrilled to find a good vegetarian taco!). I've since moved on from Troy due to graduating, but I'm very happy to see Muddaddy Flats is still around. This was one of my haunts from my college days where I knew I could get a quick, delicious, and filling meal for a reasonable price (especially for my collegiate budget).
