Here's a little be about me and the type of cuisine and service that I offer: I was born and raise in Haiti and at the age of 11, I started cooking out of necessity as my parents were gone very often.

Chef Roody is very friendly and welcoming. I visited Salt Lake City this past weekend and was looking for some haitian cuisine. I stumbled upon his facebook page and thought he had a food truck so I called to gain more information about where the location was. He stated he operates the food truck for Farmers market but instead he welcomed my husband and I into his home and served us some delicious haitian hot chocolate. He made us feel very welcomed and can only imagine that his food is even better. Would recommend if you are wanting to try a taste of Haiti! More...

I have been to the food truck a few times to eat and I also purchase their Haitian spice blend. The spice blend is a must have for our pantry. Our favorite way to use the spice blend is on cabbage that we roast. The food in the food truck is delicious. I am by no means an expert on Haitian food, but I do know good food when I eat it. Often when I go to the farmers market it's to get food from here. I recommend giving it a try. More...

All I have to say is... I will be getting the Haitian Plate every time that I go to the farmer's market. It was one of the most delicious things that I have ever had, and seemed truly authentic (I have never been to Haiti, so I can't say for sure, but I'm pretty sure that this is the real deal ). Makaya was very responsive to our initial requests to host a dinner for a group of 15 people at our Park City ski rental. He helped us customize a delicious menu within our budget and proposed a very reasonable price for an evening of his services . Unfortunately for us, our plans to have a private chef to our house changed last minute and we ended up having to cancel a week prior. Makaya was very professional and wished us a great vacation. Hopefully next time we are in town we will have a chance to try some of his Haitian influenced cuisine and some tastry djon djon. More...

Walking through the farmer's market and looking for something to eat, I saw Makaya Catering serving up plates of Haitian food.  I'm going to Haiti in November and have been interested in trying some Haitian food before going, but didn't think I'd have the chance in Utah!  They were giving out samples and it tasted good, so I went ahead and tried it.I got a plate with marinated pork, rice, and pikliz.  There was a sauce on the rice that tasted somewhat tomatoey.  The pikliz was delicious, it's a haitian spicy relish, somewhat similar to coleslaw.  I loved the flavor of it and thought it mixed very well with the pork and rice.  The pork was delicious.  Marinated for 24 hours and full of flavor.  They also have various juices.  I went with a passion fruit.  It was really, really good.It was a little on the expensive side, like seemingly all food trucks, but $12 for the chance to try some Haitian food was well worth it.  They were really nice and happy to talk to us about visiting Haiti.  I'm looking forward to having more Haitian food! By far, my favorite and signature dish is cheesy polenta topped with Oxtail Ragú. My grandma taught me how to make that one. She would say "Roody, the secret is in the spices, you must learn the spices and pair them well with the ingredients."

When creating menus for my clients, I have three words in mind is "Listen, Listen, Listen." I like to chat with and get to know my clients to get a feel for what they might like and make suggestions from there. Some clients, especially those getting married, have planned their events for months even years so it is of upmost importance to listen so we can make their dream come to life.

Nothing makes me happier than seeing the smile on people's faces as they try Haitian food for the first time and fall in love with it.

Feeding people is my passion and my inspiration. Food brings people and food that tastes good makes people happy and I am happy when people around me are happy.
