We found Bites by Eydt on The Knot after having another caterer fall through. Dick Eydt was friendly and extremely accommodating, and made the effort to come out to our home to cook for our family for a wedding tasting. The experience was extremely unique and fun! The quality of the ingredients and food was fantastic. He went above and beyond, and spent nearly four hours cooking and presenting the food. It was a very memorable experience. We finished the evening very pleased and confident that Bites by Eydt would be a fantastic choice for our wedding caterer. Dick was very fair with pricing and worked with us to accommodate our specific menu requests and to ensure that everything fit within our budget.
We did find it strange that he did not send a proper invoice or confirmation of payment when we paid cash for our 50% deposit. We had to request that a text be sent for proof of payment for liability purposes. We had two calls with Dick Eydt leading up to our wedding, and he was extremely friendly accommodating, open and friendly each time. He did not provide an inventory list of items he would be providing, but instead took notes in his phone and verbally repeated what he would bring. This made us nervous, and we created our own inventory list for the wedding accounting for all items that would be required.
We chose to serve bacon wrapped jalapenos, assorted flatbreads, cocktail shrimp, a charcuterie board and caprese skewers for appetizers, and beef tenderloin, salmon, couscous salad, grilled vegetables and rosemary potatoes at our reception. We received excellent reviews of the quality of our food on and after our wedding day. Bites by Eydt was extremely friendly and interactive with all our guests.
There were several major errors, however, worth noting. We paid for two servers, one head chef, and one bartender for our wedding (50 guests), and were told that they would be wearing black slacks and white shirts for our semi-formal wedding. All staff arrived in shorts, tennis shoes and t-shirts/polos. Many guests took note of this and found it strange, and out of place. We also specifically requested that no alcohol be served before the ceremony, yet I looked out of bridal suite prior to the wedding and found guests walking around drinking alcohol. We were very upset by this, and found it to be disrespectful. When addressed, we were told that they poured because “the guests requested it.” In the future we would recommend the caterer respect the wishes of the payee. Additionally, we were ensured that all drinks would be served in glassware. We reviewed the amount of glasses that would be provided, and were told that they would be washed and reused if necessary. To our horror we found red solos cups littered throughout our venue and in the hands of our guests. We addressed the issues during our reception and were told that they were “brought and being used for kids.”
We paid for a beef tenderloin carving station as a part of our package, and went over the details numerous times in advance of the wedding day. We were told that Dick himself would be carving the meat for our guests. When dinner time arrived on our big day, the meat was sitting out to be served, already carved. This was very disappointing. All of the food was plated beautifully, but served without on platters without warmers.
On three occasions the glass water jars for guests to serve themselves were empty, and the Mother of the Bride had to ask for them to be filled. Additionally, there were styrofoam coffee cups out, not the ceramic/glass coffee cups that were discussed. Also, as dinner was announced the Mother of the Bride noticed that the entree labels and candles which were set out in advance had all been pushed to the side, and were not in front of their appropriate dishes. She had to be the one jump up and place them in the dishes.
Finally, our dance floor was open from 8:15pm-10:00pm. From 9:00pm-10:00pm, there was no bartender present at the bar. Our guests were pouring their own wine, beer and drinks. That was horribly embarrassing. When we confronted Dick, he said “I will come pour,” however, he did not remain behind the bar. We paid for, and our contract included a bartender, so we were extremely disappointed and embarrassed that he was not present for nearly half the reception.
All in all, we had a decent, pleasant experience with Bites by Eydt, and enjoyed the quality and price of our food. We would encourage patrons to review details many times, and be very clear about your expectations to ensure you have the outcome you desire. Gourmet pizzas - Caramelized Onions with Goat Cheese & Sausage drizzled with ages Balsamic; Fresh Tomato with Fresh Mozzarella and topped with Pesto; Brie with Organic Strawberry Spread & Red Pepper Flakes; Filet Mignon with Horseradish Sauce; Lobster with Brie and brushed with Butter; Bacon, Lettuce &Tomato Pizza; Warm Toblerone Sauce with Premium Vanilla Ice Cream, Pizzelle Cookie & Whipped cream.

Listen to my client's menu likes and ideas and then come back with several ideas and within their price range. We can do any menu request, for example: My client's husband was born on Elvis Presley's birthday, so she wanted his famous Elvis sandwich of Grilled Rye with Peanut butter, Banana and Bacon..... So we did it and they loved it. (quite a good appetizer, despite sounding weird)
