We started as a two person operation mostly catering for our friends and families. These events were mainly birthday parties, engagement parties, christenings and other smaller occasions. It wasn’t long before we began to take on bigger jobs, and hired more staff. After several months, we were catering for events such as weddings, funerals and even formal corporate functions. Today, we’re an experienced team of 12 people, including gourmet chefs, professional waiting staff, and even a mixologist.
One of the biggest challenges is calculating the right amount of food and drink for an event. Food waste can be a problem in the catering industry so it’s crucial that caterers prepare properly to ensure everyone is fed while also minimising waste. This is normally easier to do for sit-down meals with structured courses, but can be a little trickier with party style food such as with buffets and canapés. However, with experience and the right preparation, you can achieve both full bellies and virtually empty bins. Especially if the food is delicious like ours always is!
For us, most of the hard work is done before the day of the event. From ordering only the best quality produce to ensuring all equipment is spotlessly clean, we put the hours in early. As the old adage goes, ‘if you fail to prepare, prepare to fail’. This includes ensuring that any guests with special dietary requirements are prepared for, all staff members are aware of the time schedule, and all food that can be prepared before the event is ready to go. Once that’s all taken care of, we can focus on providing delicious food and a professional service with a smile throughout the duration of the event.

Island bites catering recently provided catering for us on two occasions she did a caribbean buffet for my engagement party and an English hot and cold buffet for my wedding trisha and her team are the best. The food was beautifully presented, the food was tasty and her prices very reasonable, Trisha worked within our budget and chopped snd changed things on demand, she has do many options to choose from, Island Bites Catering is now my go to for all my catering needs

From start to finish it was a pleasure to work with Marie-Clare. I had contacted her are based on reviews and was not disappointed. We were planning a canapés and champagne reception following a church celebration. Marie-Clare came up with multiple options to fit with our budget. She and her team are phenomenally efficient, they are a delight to work with and the food was delicious. We received many compliments about the canapés and I would highly recommend her for any event you might plan.

Anthony and his team provided a spectacular 7 course tasting menu for 24 of my friends to celebrate my 60th birthday. His approach was completely professional from start to finish, the food was AMAZING and I can’t recommend him enough. Further to the success of my do Anthony returned to cater a family party for 18 at Christmas with an array of canapés and bowl food. Everyone was blown away by how delicious it all was and everyone loved Anthony! He is booked for a third time to cater my Dad’s 90th sit down lunch in the summer. I know I can completely relax as Anthony will have everything covered from serving up delicious food to the hire of the tables, table cloths, crockery etc. I will be able to relax and leave everything to him and his team once again. Fantastic!!
