We offer traditional American style low and slow smoked BBQ straight from the smoker in a street food style.

The Smoker is a trailer mounted reverse flow offset (Called Brian) that can easily cater for up to 400 people. It's powered by wood and produces delicious wood smoked food.

Q&As

Smoked Brisket Chilli. We take 12-15 hour smoked Brisket, cube it, add our own unique blend of spices in our chilli seasoning along with all of the other ingredients and smoke it for a further 3-4 hours. What you get is a very complex flavour profile that's smokey and sweet initially, which is then followed by undertones of cinnamon and a nice warmth. It's not a "hot" chilli, as to us it's all about the smoke and the flavour.

It goes without saying that we'd discuss their requirements in the first instance to see what they like so we can tailor the menu to their taste and budget.

Three things really.
Firing up the smoker. It's a little work and it takes practice to nail it, but cooking with live fire and smoke really does it for me. It's the aroma and the challenge.
Sharing proper wood smoked BBQ. It's not available just anywhere in the way we do it. Old school, wood, charcoal low and slow from a traditional smoker.
Most importantly, seeing the faces of our customers when they take the first bite and the glances they give to their friends. Call it what you like, but I like to think of it as the WOW factor.

I've been a smoked BBQ fan for the best part of 20 years. It's grown from home cooked food, into a food blog and now into a business. It's not just me though. The other half of "us" is Toni, who also loves to invent things to either go in the smoker or go with the smoked food. For example, she makes a fabulous Peach ketchup to go with our Pulled Pork. The Mac Bombs were her idea too and always go down a storm.

We offer something that's different, has a bit of theatre, stands out from the crowd and above all else is tasty.
