What’s your signature dish?
Seared loin and confit shoulder of lamb with rosemary, thyme & garlic, port & blackberry sauce, boulangère potatoes & minted green beans, courgette & peas
How do you go about creating the perfect menu for your clients?
I have been providing bespoke menus for clients for over 20 years. I make sure I have a complete understanding of the client's requirements by close consultation and discussion before producing a draft. Once this has been done, I then work closely with the client to make any tweaks or adjustments to ensure it exactly meets their needs. I offer tastings and samples of suggested dishes.
What do you love most about your job?
I love that every day in the kitchen is different and holds infinite possibilities. From baking a fresh focaccia first thing in the morning to slow cooking a shoulder of lamb over the course of the day, the smells, colours and comradeship in the kitchen are the only motivation I need.
What inspired you to start your own business?
As I gained more experience, I was gradually asked more and more to cater private functions, events and dinners. I knew that I was good at communicating and understanding the requirements of people and I received consistently good feedback about the jobs I did. I formalised my work by starting the company and since then, I haven't looked back.
