Nick was a great teacher , showed us lots of new skills and we learned lots of new recipes , we also met some lovely people . Very relaxed atmosphere and Nick always on hand to help . Absolutely brilliant Sunday evening at Station House Cookery School in Kirkcudbright! 17 friends learning cookery skills from Nick Morris and enjoying fabulous Indian food. Nick’s commentary was friendly, informative and understanding of our “beginners entry level” and enabled questions and... lots of banter! The audience participation in the demo ensured we all paid full attention, in case you were next up! Loved it and will be back to learn something else soon. Attended a surprise birthday lunch. Firstly, alot of thought has gone into the design of the restaurant which has retained some of the original railway station ticket office, it is beautiful. The food, and there was plenty of it,was served on wooden platters and could not be faulted. The rolls were home made as were the sausage rolls and quiches. To start Thank You Nick!! Yesterday I attended a course at the cookery school for Bread making, right from the off Nick was inquisitive to find out what everyone was wanting to get out of the day course so he could tailor (for beginners or a wee bit more experienced) the day to what everyone was wanting! Nothing was too much trouble. Had a great day and as the group wasn’t too big everyone felt like they could get a wee chat with Nick and ask any questions they had. In the morning we had a demo on bread making and the differences between different breads and where they originated from (I never realised the Ciabatta Bread was Developed in 1982 (it think) as a Italian take on the French baguette) you learn something new everyday!! Then we got to taste the fresh breads Nick had been demonstrating soooooo gooood!! In the afternoon we got to make which breads we wanted to, within realms of what we had been talking about a been shown through the morning. I myself went for a 100% wholemeal bread and a 50/50% white & wholemeal mix so we could see the difference in the crum (texture). While these were proving I had time to make a Irish Soda Bread. Nick was so encouraging for us to try different breads and so helpful if you didn’t think your dough was right he would help you find out if it was right or not and help you workout if you needed to start again or if it could be saved. At the end of the day you got to take Home any breads you had made!! Thank you again Nick ready for the next course in September More...

the Indian cookery introduction was a brilliant course and got to bring basically a full family meal back home that I'd made. Nick the chef was such a helpful tutor demonstrating the recipes in the morning and in the afternoon we replicated them with a bit of further guidance from Nick. No more ready meals or jars for us. We made roti, samosas, Bombay chicken and lentils, Aloo gobi and black bean and mushrooms. My daughter recently had a bespoke 11th birthday party at the Station House Cookery School. It was a great success. I was really impressed by how Nick took the time to discuss and tease out from my daughter her likes and dislikes so that she was able to have a party which she was completely happy with. Throughout the whole planning of the party and the party itself I was thoroughly impressed by the customer care and attention to detail that we received from Nick. The party itself was perfect, the children had an incredibly productive 3 hours - with every minute busy, culminating in a lovely sit down meal to eat what they made. Nick's relaxed and friendly manner with the children meant they were quickly at ease in the kitchen and were able to learn new skills while having fun. This is an extremely professional school with all the right values for the joy and skills of cooking.
