As a strict vegetarian, almost vegan, Las Vegas has been a city where I could always find a plethora of dining options, however sometimes a drive to the suburbs is required. In the case of POTS not only was the drive worth it but I'd suggest now, mandatory.The location tends toward a minimalist decor but with strong accents which teeters between coffee house and lunch diner. Yet, this allows you to focus on what your eating , while still feeling comfortable. Raina welcomed us with a smile as we entered, and happily indulged all of our questions, being especially patient with my non vegan, non vegetarian dining companion. The menu offered a forceful array of vegetable based entrees while not straying from the regionally focused cusine. The "Platter" was an eclectic collection of spices and textures led by the cauliflower steak and eggplant. We also shared a flava bean led gyro, the flavor of which dances in our palates hours after. As an ethical diner, the most pleasing aspect was the lack of waste, with compostable straws and small cups making sure any footprint is minimal.
