Pho Cao is undeniably a cool joint and, while it happened to be love at my first step into the restaurant, that doesn't mean it'll be everyone's joint. Pho Cao artfully blends the flavors of a Vietnamese restaurant (let's be honest, most of the restaurants have relatively boring decor and set-ups) with the, shall we say, charm of a dive bar, and packs in a stage for live music and karaoke to boot. This is about pho, either you get it, or you don't. If you're looking for the real deal, you've found it. Grab the crispy spring rolls and ask for a side of their house made chili sauce, it's pho-king delectable. The soft rolls are as vietnamese as you can get and also amazing, try them with the peanut sauce. The steak pho is legit. The broth, the fresh jalapeno, bamboo sprouts, fresh basil- toss them all in and stir it all together. The rice noodles are perfect. Be prepared for the ambiance. It's live music.
