Having been a sushi fan for almost a decade, I decided to take a beginner's course at Miya's Catering. I was humbled by Miya's expert level of sushi-making. He made it look so easy, and captivated us with his stories and wealth of knowledge. I now have a lot more respect for sushi chefs, having learnt first-hand how difficult it is to make good sushi consistently, without transferring too much heat from your hands to the food. What impressed me most was his obsession with cleanliness. He drilled us to keep our workstations hygienically clean, especially when preparing the food.
