My family and I ate at Gilbert's Bakery over a week ago before our family vacation to Boston/Cape Cod/Maine. We were stuck in the airport for hours and would have an entire day of flying because of a huge mistake on the part of Delta. My family and I were pretty upset, tired and hungry and our day has just started a few hours before. We came to Gilbert's for the following reasons:1) Terminals H and J have terrible food options in regards to amount, quality and variety.2) We were hungry3) We needed some comfort food.As such my family bought cafe con leches, Cuban toast, croquettes and a number of deserts. The meal was for the most part very satisfying. The cafe con leche and toast certainly hit the spot, the desserts were yummy, the croquettes though were a little off. Regardless it was a good meal, and if you are in these terminals Gilbert's is probably your best bet for a good one.I would like to say though, the ladies (and I wish I had gotten their names) who were manning the bakery were especially good. They quickly got our large order prepared and all the while listened patiently to me and my family gripe about what Delta had done to us. Gilbert's Bakery made our family's Easter that much more special. Both of my sons have food allergies, and Gilberts Bakery was able to accommodate all their allergies. Unique and delicious approach to the classic croquettes!!!! It was my first time at Gilbert’s. I was surprised with all the vegetarian and even vegan choices. I tried several style croquettes: asparagus was mild in taste, not very flavorful - spinach tasted very much like spinach. The Romero croquette was the winner. This bakery is located in the food court between Terminals J and H. I was super surprised to find food here that was so tasty. We ordered Chicken Empanadas and Spinach Quiche. This is a nice bakery. Nothing fancy. There is a nice meat-like option alternative. Employees usually don't speak English so sometimes it is hard to communicate.
This five-star review is exclusively for the VEGAN PASTELITO DE CARNE. This is the best I've had in Miami by far, and I tell all my vegan and vegetarian friends to visit Gilbert's for this reason. Thank god for Gilberts Baker! I called several bakeries for a cake for my mothers 90th birthday and all I got was rudeness and very overpriced quotes with no assistance. When I called Gilberts they were kind, helpful, and i was able to place the order for the cake right away. I long for the days when all businesses used to conduct themselves like this. With some pride and customer service. I highly recommend Gilberts not only for their wonderful service but they have the most delicious cakes, pastries and savory goods. We came to this bakery to get a custom cake of my brother in laws face printed on a cake. As if it wasn't funny enough, we did a design of "The New Most Interesting Man in the World" which cracked everyone up. Not only did they do an amazing job, they were friendly and kinda worked last minute on this to make sure it was done on time. No other bakery could have pulled it off like they did! Aside from the custom cake, this place is a Miami staple. Everyone knows Gilbert's! It's always a struggle to find that best pastelito in Miami but I'm pretty sure you won't be disappointed stopping here for a quick Cuban treat. This is the most misunderstood bakery in all of Miami. Maybe the problem is that they belong in the 1800's and they haven't realized they live in the 21st century. On top of that, they are located in coffee fueled Miami. The fast pace of the city and the absence of time at Gilbert's creates a lot of friction and frustration. All the pastries, cakes, and trays with sandwiches and hors d'oeuvres are beautifully made, and very reminiscent of baroque art, which is the theme here. I come for the pastelitos of guava and cheese, the trays for parties, and a cubano or a media noche. All this I wash down with a cafe con leche. I stick to this religiously, as this is all I like at Gilbert's.When you come here, you need to remember that time will stand still. Allocate plenty of time and don't be in a rush.The staff here is really pleasant and helpful, but this is like a restaurant without a front house. It does not run smoothly, and lots of fine tuning is necessary. But the food is really good.I particularly recommend the media noche. If you think that a media noche is just another Miami sandwich, you need to order one here. It is the best media noche in the city, hands down. It will absolutely make you a fan of this bakery.Then again, if you think that you can come in, order and go on your merry way, forget about it. You will be stuck here for a while. I have not had coffee anywhere close to this quality since I left Italy 10 years ago. The Cortadito is AMAZING, Sooo good. The cashier described it to me as "the whiskey of coffee", and she was right, so strong, yet so smooth. I am a new fan of Cuban coffee! I was so sad to find out that the Gilbert's on 32nd Avenue and Coral Way is now permanently closed! What's up with that? :( That being said, I came here to get my pastelito de queso y guayaba fix while I'm town a couple of weeks ago, because no matter what, there is not a single Cuban bakery that makes them better. Nice higher class cuban bakery, cafe con leche is good and staff are super friendly. Crosiant with ham and cheese was good, they have pastelitos and sandwiches, but they are smaller than the usual sizes, but pretty good bakery, only a few tables outside.
Gilbert's take this industry to a higher stratosphere. I've never seen a food business be as consistently creative and "fresh" as Gilbert's. They work very hard to ensure that they remain at the top of the "food chain". This company is a gem! More...

Excellent bakery and very nice service. As soon as you come in they greet you nicely with a "buenos días" (good morning) and "ya estamos con usted" (we'll be with you shortly). I never guessed that this spot at an airport terminal would actually taste good. I figured since there's so much Argentian/Cuban influence out in Miami, it's worth a shot. I'll fly Delta from Miami back to NYC just so I can have another chance to sample the goods at Gilbert's.Sure, I had breakfast about two hours ago but I couldn't rely on a pack of airline pretzels to keep me full for the 2.5 hour flight. Enter the food court area of Terminal S and specifically, Gilbert's Bakery.Display cases of tempting treats all presented their siren song but eventually I selected a cuban sandwich (warmed up) and a pineapple tart pastry.I received my bag that contained the goods and intended to save the items for the flight.This conviction lasted all of five seconds as I found a free table and ripped open the bag containing my airplane snack.At first I was a little disappointed that bot the sandwich and pastry were somewhat jammed into a small box but all was forgiven after the first bite of the cuban sandwich. What surprised me the most (in a very good way) was how soft the actual bread was compared to the panini-like harder breads I've had on cuban sandwiches in the north.I heartily approved with each bite of the bread. Moments later a similar epiphany of flavor burst into my mouth in the form of a pineapple tart. At the rate I was eating I briefly considered reenacting Tom Hanks' "The Terminal" and living here for awhile.I also appreciate the story behind Gilbert's, one of economic liberty trumping over collectivist communist aggression. Having their original business seized by the Cuban state of Castro, the family behind this bakery regrouped and relocated to the US. I'm glad to see they've prospered and that their hard work is rewarded. I ordered a paleo cake for a bridal shower......and it was GORGEOUS! It was exactly as the bride wanted, the perfect color of frosting, which was the color of Tiffinay's blue, and they matched it perfectly. I was planning my best friend's 50th Birthday party and went to Gilbert's to order the Hors d'oeuvre and the cake. I wanted them to be different (not guava pastelitos or croquetas), classy, delicious, and well presented. The lady that assisted me perfectly understood my dilemma. I was so happy to find this place at MIA this past Saturday morning. I couldn't spend 4 hours in Miami without a Cubano, so I had one for breakfast here while waiting for my flight back to DCA via PHL. The quality was outstanding (especially for an airport sandwich counter/deli). The bread was fresh and so was the meat. They had several other kinds of sandwiches here that were in the counter window that were made fresh as well. Why is everyone hating on this place?! I remember a few years ago this was THE place to get your pastries. The quality is no longer as good, hence my 4 vs 5 stars but it really is not less than 3 stars no matter how you look at it.My reason for coming here are likely the same as everyone else. I was talking to my Miami heartthrob today about how much I miss a good café con leche, a cortadito and my very favorite: the guava pastelito. This place catered an event at my job and I figured, hey, pastelitos and such, I love 'em like everyone else, but I was not expecting to be wowed, but I seriously was! The pastelitos were soft, not excessively flaky,and super flavorful! I couldn't get enough of them! We had the finger food size and they were a perfect size with the perfect amount of filling. The bocaditos de pasta were really yummy and full of soft, fluffy, addictively flavorful goodness. Some other bocaditos with a green and white cream were tasty, too. On the desserts end, they had these super cute and dainty dessert minis, and I mean mini! They were perfect for a finger food menu and packed with gigantic flavor! I had some mango pie and a mini flan. Both were super delicious! I have never actually had traditional flan (my teacher made a delicious more cheesecake-y version), so I was glad I had my first experience with this one. It was very good and had only a very very slight bit of eggy-ness, but overall, the caramel flavor was perfect, as was the texture.The downside--Well, I really wasn't a fan of the chicken pastelitos. They used a different type of dough that was harder and drier like a shortbread and I wasn't a fan of their spin on this particular item.In terms of presentation, everything looked classy and they did some simple elegant touches with fruit flowers, romaine lettuce, and such. Also, they arrived on time, which is also super important. Overall, 4.5 stars. Very very good! Everyone at my job is Cuban, mostly first generation, and they love this place! It is their go-to for catering. Based on this experience, I was very pleased and the only small issues are the dough for the chicken pastelitos and the very slightest eggy taste in the mini flan. I just can't believe that this is the place that I've been avoiding because of such terrible reviews. I guess either they have gotten a lot better or the catering is just far superior to their common bakery stock. Gilbert's gives croquettes a bad name but their petit midnight sandwiches and chicken fricassee pie wedge are close to perfection. It's a bit pricier than your regular bakery but I find it delivers a better and fresher sandwich than other local Latin bakeries. The Spanish tortilla and stuffed potato are pretty good too. OMG...I don't really wake up early enough to make it here for breakfast but I had lunch there today and it was DELISH and CHEAP. For 8 bucks, I got two mini sandwiches with pimento spread (MY FAVE), three ham croquetas (they've MASTERED the creamy ham filling here), one teensy slice of chocolate cake (uber moist and gooey goodness) and a bottle of water. Talk about affordable. My only complaint? I can't stand it when the staff don't speak English and give YOU 'tude for not speaking Spanish. Yes, before anyone goes crazy on me...I realize it's a Cuban bakery, but still. The lady who was helping me looked at me like I had 10 heads when I didn't know Spanish.
