When I started making bagels back I'm 1998 I had nothing but an idea and 3 billon dollars. It took about 7 years of apprenticeship to develop our skills in the bakery. Sorry about the first 7 years Galway. These days I am happy with the character of our bagels but there is still along way to go. Thankfully bakery is multiigenerational. Ok kids!
