Seriously the best bbq around. The turkey is amazingly tender and juicy. The monster beans have tons of meat. Pulled pork is excellent—very few fatty pieces, just all tender perfectly smoked meat. No fries, but the chips are good!

My husband wanted this for Father's Day and I was sad to see they were closed and sold out, at 6:30pm. So I tried again on Monday but I totally forgot they are closed on Mondays...which the sign clearly stated. Duh! Now, 3rd times a charm. We went tonight and the food was worth it! Brisket, pulled pork, street corn, monster beans and the cornbread!!! Yum!! Plus it was really nice that they had everything you could need, out and available so I didn't have to bother the staff. Loved the nachos... it's huge enough for 2-3 people to share as their main meal. The only things I would say if I was being really picky is I would prefer different chips. They weren't as thick enough or tasty enough for the toppings.. we also got the brisket tacos on taco Tuesday but the nachos definitely outshined the tacos as I am not a huge fan of corn tortillas. I'm always encouraged when BBQ is served dry (without sauce). It says the pitmaster is confident the quality of their smoked meat won't be enhanced by sauce. Doc Watson's lets you decide whether you want to add a sweet or spicy sauce after your entree is served, but you won't need it. This meat stands in its own. I chose the 4-meat platter: pulled pork, brisket, ribs, and sausage. It was a carnivore's delight. No veggies, sides, or rabbit food get in the way of excellent smoked meat. I liked the ribs and the sausage the best. Five baby back ribs were smoked with a subtle dry rub. The sausage had a nice pepper "kick" without searing taste buds. The brisket slices were tender. The outside edges were sealed with a heavy rub, adding a gritty, peppery taste to those pieces of meat. I found the pulled pork a bit bland. It was smoky but all inside meat. Besides needing more seasoning it lacked the different flavors from tender inside meat, crunchy outside edges, and occasional juicy fat. Food was great!  I got their sampler platter and my wife got their ribs.  The ribs were great.  I enjoyed most of the meat sans sauce and the sauce that I did try on the pulled pork was good and spicy sweet.  Got a sample of their smoked turkey and was pleased with the smoky and juicy texture.  The ribs were as we like them.  Not fall off the bone, but tender and not "mush"  the same could be said for the pulled pork.  Again, all these were wonderfully seasoned and we ate the ribs with no sauce, and the pork was textured and flavorful.  The brisket was good.  I don't like a lot of fat on my brisket, but I don't like a dry tough piece of beef so I was happy with the tender texture of the brisket and the moist yet not fatty flavor.  They have some daily specials that I plan on trying when I swing back there for lunch one of these days. I was just in for the first time today and I tried the pulled pork and a hot link it was phenomenal spot on to true texas bbq I go to central TX all the time and this is the first I've found that's anything comparable to it. The prices are good where they are for good bbq! The only thing I would suggest is adding an option for a two or three meat plate with sides. Never in a million years would I have thought I would have spent St. Patrick's Day at a bbq joint.

After trying to go to some of the usual haunts for corned beef and cabbage, and finding they all had 2hr waits, I recalled a post a friend of mine made earlier in the day, that they were having CB&C here. So, I called ahead after learning that this place closes when it's gone, and was happy to hear they had some left.

Now let's get one thing straight, I LOVE corned beef. My mom has made it special for me for 36 years, bless her soul. The thought of a smoked vs boiled one was just blasphemous. Well, sorry, mom, but things have changed.

The minute you walk in the door here, you're greeted by the smell of amazing bbq, or as my daughter called it "Christmas". The staff helped us rookies decide what to order, but I already had one thing on my mind. So we ordered the corned beef, pulled pork sandwiches, Mac n cheese, and street corn. Wow, portions are HUGE here, and I knew I should have ordered only one sandwich for my kids to split. Well I was wrong. They devoured it all, and neither if them wanted any sauce! And the corned beef? From the beef to the potatoes and even the cabbage, all were cooked perfectly. Let me say, smoked will be the only way I ever have corned beef from now on, and that will be from Doc Watson's! The only thing missing were the carrots, but I'll let that slide.

Great job here! Definitely will be back, and will definitely spread the word!

Today I had the pork chop.... first of all, as it comes out to your table there should be angelic music playing. This thing is amazing to the eye. The color is gorgeous and the grill marks are perfect.
After I took pictures and sent them to jealous friends, I cut into this pound of pork perfection. It was juicy, you could see the smoke ring, it was impressive.
As far as the taste, well, I wanted another. Simple as that.
Had the beans and potato salad, the wife had a pulled pork sandwich. Needless to say we made it all go away.
We will be back again. The salmon and prime rib are on my wish list.

If you crave a bit of smoke then Doc has what ails you!!! His cure will delight your palate and end any tummy rumbling you have.

The pickled red onions were an unexpected treat and the pickle chips were fantastic. His smoked turkey is moist and tender. The brisket had a great smoke ring and the pulled pork was spot on.

I went here yesterday (Mother’s day). Let me tell you.. this place rocks! I had the brisket sandwich. The smokiness was perfect! The sauce I chose was hot and sweet! Delish!! I chose Coleslaw and Mexican street corn as sides .. The coleslaw was so creamy! What can I say about the Mexican street corn... a lot! Heavenly sweet with some excellent heat! Went there tonight. I now have my go-to meal there. The Thursday special, the bone-in pork chop. $11.99 gets you a huge, I'm talking at least 2" high, juicy pork chop and yummy corn bread muffin (which I wish was warm). I've noticed with this restaurant their meats are not overly salty. The "pit boss" said, salt for their rubs are not one of the 1st few ingredients, which is great for someone like me who is not a fan of salt. Hubs got the Turkey, which is also very juicy and tender. I've eaten here a few times...   each and every time I've been amazed at not just the food but the service as well.  Don't be surprised if the owner spends a few minutes chatting with you.  He's always willing to answer questions about their food and any criticism is welcomed, positive or negative.  They always seem to be working on improvements but honestly, there's not much work to do.  Today I had the pork chop again and it was the best I've had, not just there but anywhere.  My wife had the Rueben sandwich, which she had a few days ago and she wanted it again.  You just can't go wrong with this menu.  The addition of soup over the winter was a great surprise.  It looks like they rotate between 4 or 5 different soups and each and every one is outstanding.  You have to try this place. Went here on a recommendation from a friend and have to say - awesome! The staff is friendly and helpful, place is clean and food was very good! We wanted to try the sample platter but also wanted to try the turkey. They were going to sub an item but we wanted to try all on the platter. Cool BBQ spot!Inside there is some seating, it is nicely decorated and they have a decent selection of bottled beer as well.I ordered a brisket sandwich and a side of coleslaw for take out, it was ready quickly.The sandwich was a pretty good size, about 6oz of chunked (not strips) meat and even came with a bag of chips. The small side of coleslaw was sizeable as well. The meat itself was fantastic. Super tender, not too fatty and high quality. I opted to douse my sandwich in the "hot" BBQ sauce and it was just enough to give a little kick but did not overwhelm the quality beef. The coleslaw was good as well, thick and creamy, this I how I like coleslaw and I enjoyed this one. My only constructive criticism would be to crisp/toast the bun a little more, but that's being really picky.Together this was a pretty good and filling lunch, though it came at a comparably higher price of ~$11.Will come back! Just had my first experience and I was not disappointed!!  It's a little tucked back off Weber so not hard to find but hard to see if you're not looking for it. I tried the pork chop on special and it was HUGE and delicious!!!! Soooo tender and tasty!!! My date had the sampler platter everything was so tasty!!!  I can't do spicy so the sweet sauce was perfect. For sides I tried the Mexican corn and Mac n cheese...  both were VERY good!!!  Ohhh and the pickles were delish... don't forget the pickles!!! More...

WOW What a perfect first visit to a restaurant..Doc Watson's does EVERYTHING right. 'Friendly' is a HUGE understatement for the staff...they offered us several samples while we were  trying to narrow down our decisions, including the sweet pig (OMG) and DaNGeRoUs apple pie moonshine (they make it in house and it's better than any moonshine I tried in Tennessee). The atmosphere ROCKS..cozy, warm, locally grown vibe..vintage/nostalgic/rustic but not overdone...even lighting was just right and that's important to me..plus they have lots of cool Doc Watson swag. Most important..the FOOD..I had smoked turkey sandwich..didn't matter that they piled it so high on my plate..my whole family was picking at it. Perfectly smoky/juicy/tender (as was my daughter's brisket) all on brioche buns (extra points)..I gravitate to spicy and the sauce was well balanced, not too sweet tangy or hot. Not that my turkey needed sauce. We brought home ribs..perfect fall-off-the-bone (zero leathery), deserves way better sauce than the great value stuff in my refrig. Mac and cheese has to be loaded with heavy cream (YUM) beans were a VERY pleasant surprise (little spicy and less sweet)..definitely a REAL recipe..you won't wonder if these came out of a can (as I have at other bbq restaurants] Mexican corn had just the right kick and was super cheesy (not just cotija cheesy..super melty) fresh baked corn muffins and brisket chili leave me speechless. I can't wait to go back..this place makes me glad I live here..and that says a lot after a decade of seeing businesses disappear in this area. Geez I am almost ready to call Guy Fieri.. Talk about a hidden gem, tucked away in Bolingbrook, IL about 45 min south of Chicago. Hungry with a long drive to Peoria ahead of me, I yelped BBQ places along the route. This place, singled out by many for excellent food, caught my attention. MAAAAAAAN THEY DID NOT DISAPPOINT!!!I loved the rib tips and bbq ribs but the star here was the CANDIED BACON. Yum Yum Yum for the Tummy Tum Tum. If you like bacon you'll love this sweet and zesty concoction. Surprisingly they served thick and meaty bacon slices. Literally you could get your fill from 3-4 slices. The staff here was suuuuper friendly. I miss the days were folks cared about their customers. This place takes me back to those days. This is BY FAR the best BBQ in the south suburbs! It is a classic take on Texas BBQ and if you didn't know better you would swear you were in Texas. This is a place that is going to get well known in a hurry. Fair prices, good beer choices, fabulous sides, and the meat is INSANELY GOOD! I have not had a place this good since Uncle John's in Chicago closed. The man to my left is the best Pit Master outside of Chicago and would be in contention for one of best in Chicago! BIGGG ups to my guy Juan!Christopher knows how to take care of you and is one of most hospitable proprietors of any restaurant I have ever been too!If you haven't been here, stop by, have a beer, have some food, and soak it all in! Solid BBQ place. The food and sauces were good snd the staff were friendly. Nothing I'd drive our of my way for but if you're close I would make this your go-tobBBQ place.

This place is great, nice atmosphere, my wife ordered the brisket and Texas potato salad, while I ordered the brisket sandwich and monster beans.Nice smokey flavor on the brisket, with just the right amount of seasoning, and very tender.  Monster beans were a great unexpected surprise.  My only criticism, is that the brisket was a little too fatty for my taste.  Could have been trimmed a little more. This was my first time here. After reading all the good reviews. I decided to give this place a shot. I ordered 3 full slab of ribs. 3 large mac and cheese and Pig Candy. We opened the first slab up and I couldn't believe how tuff the ribs were. I was shocked and disappointed. So I did something I never do. I called the store and was transferred to Chris the owner. He was very sincere and apologetic. He said to bring in the other two slabs. When I arrived Chris brought me in the back and cut open the other slab and it was tough as well. He credited me my whole bill. I told him I  would pay for the first slab and the sides. He insisted that he credit the whole bill back to me. You dont find many owners willing to do that. Wow.. and yet another BBQ joint throws their hat into the ring for best BBQ in Will County! This place did not disappoint at all! I had the pulled pork and my wife had the pulled chicken. We were both amazed at the flavor of the meat - you could tell that it had been seasoned just right. And they served 2 different sauces - one was a little sweeter and the other had a little heat. Both were outstanding. Mac and cheese was excellent with melty, stringy cheese and the pasta noodles were cooked to perfection. Oh, and 2 words: PIG CANDY! It's basically strips of bacon served at room temperature with a whole lot of flavor! I'd order that again in a heartbeat. One small issue... their prices were a little high. After some neighbors and a member of my parish raved about Doc Watson's, we gave it a shot.  As it were, I was not even in the mood for BBQ and feeling a bit upset in the tummy.  However, one bite of the pulled pork sandwich with a gentle smear of the sweet sauce not only cured my "off-feeling" but made my taste buds weep with joy.  There is no other place in my opinion to go for smoked pork.  I did try the Texas potato salad and cole slaw and found them to be delicious.  I can say is that people in the Chicago area can forget about other places as Doc Watson's is THE place to go for BBQ.  Next trip it will be the brisket, then the ribs, etc.... Went to Doc Watson's because of a recommendation from a friend. I talked to Chris, the owner and he explained how the food is prepared. Quite a process. My wife had the ribs and I had the rib tips. We also had 4 sides:  MAC & Cheese, Texas Potato Salad, Monster Beans and Mexican Street Corn plus a sample of Pig Candy. Chris told us all sides as well as the entree's are made on site daily. After tasting them I know why. Each was sooo good. Personally, we enjoyed them all. When we go back I would order all of them again. They served beer & wine and the decor was pretty neat as well. Great Dinner.   My husband and I split a full slab, Mexican corn and Texas potato salad.   Everything was very good and reasonably priced.  I have never tried Mexican corn and I'm glad I finally did.  It's sooo good.   The potato salad is made with hash brown type potatoes and I have never seen that.  It was probably some of the best potato salad I've ever had.  The ribs and sauce were very good as well and a $3 bottle of beer went with it well.   Service was outstanding.   The counter really did know what they were serving and they were able to answer our questions.  My husband and I both agree this was 5 stars.  I really hope it works out and they stay for a long time. I must say that this is the best BBQ over had in the North. I ordered the brisket with coleslaw. Brisket can be tricky to cook perfectly, I must say that this place mailed it. Tender, yet meaty, it pulled apart yet was still juicy and hadn't got the nasty mushy steamed texture of so much of the BBQ brisket I've eaten locally. The coleslaw was fresh and ridiculously creamy. The sauces were tasty with a nice tang and I appreciated the fact that o could add them to taste.There were also picked cucumbers that I could have eaten by the pound, sweet with a delicate kick at the end. In an era of trendy "BBQ" joints serving kale slaw and derivative food, Doc Watson's is an unforgettable representation of a Texas Smokehouse that succeeds from top to bottom. It's a location that may be hard to find, but it's a restaurant that's impossible to forget. The menu is not over-complicated but offers plenty of craveable options. The sign says they're open until sold out, and they mean it. No microwaves or freezers for reheated premade food can be found at Doc Watson's. The standards are all smoked on-site, cooked low and slow and notably NOT slathered in sauce: brisket; baby back ribs; pulled pork; chicken 1/4's; chicken wings; smoked sausages; rib tips; smoked turkey; and brisket burnt ends appear on the menu and are available by the 1/2 lb, full lb, and in sandwich form. The basic sides are what you'd expect and delicious: macaroni and cheese; potato salad; cole slaw; homemade corn bread muffins; and beans, in this case elevated to "Monster Beans," with brisket in the beans, which are a meal in themselves. The meats are prepared to perfection, and the pitmasters constantly work to improve upon their craft. Most days, I'll forgo the sauce when enjoying pulled pork or brisket, even when enjoying a sandwich. Don't get me wrong, the sauces are great. The meat simply doesn't need it. The flavor is complex, perfectly-prepared, and moist enough on its own. Other specialties have found their way to the menu, most notably the Brisket Shepherd's Pie, which is well more than a pound of a unique take on the Irish favorite that will have you coming back for more. A special dessert appears at the beginning of the weekend, a peach cobbler that is better than Grandma made. Daily Specials also appear, and are not to be missed. Street tacos put the local taqueria to shame, with pork or brisket options available. The salmon special is served with wild rice, and has become my family's go-to Friday dinner. Specials rotate, and have included everything from a Smoked Prime Rib with Potatoes au Gratin to Meatloaf with Mashed Potatoes -- and a brisket gravy that just might ruin other traditional gravies for you. The smoked Pork Chop is 2" thick, and a great rendition of the smoked chop. (There are others as well, with new creations being offered as specials all the time.)To sum it up, this has become my favorite restaurant in the area, and I find my family eating there more than we eat at home. We ordered the burnt ends, baked beans, mac and cheese, and their shepherds pie. I was excited to try the burnt ends after reading positive reviews, but I was disappointed in them and will not be ordering them again. My boyfriend liked them, but we were surprised to find the burnt ends cubed. I'm used to them being so tender they just fall apart, but the burnt ends were more like cubed pieces of brisket. The mac and cheese was just ok, but I really liked the baked beans.I'm giving this place four stars for the Shepherds pie. I'm not sure how often this is available, as it was a daily special the day that I stopped by. The shepherds pie tasted homemade and was absolutely delicious. Really, really good. Surprisingly enough, my favorite thing on the menu wasn't any of the meats.. it was the Monster Beans. This is excellent BBQ. I tried the brisket, pork, corned beef (ridiculously flavorful) and smoked links.  The sauce is a tad on the sweet side for my liking but since the meat itself was so flavorful, I didn't find the need to sauce it all that much.

We stopped in for lunch around 11:15 on a Friday and only a few other people were there. Before we left, the lunch crowd had grown some. As an amateur BBQ-er, I ordered brisket as a way to gauge the restaurant offerings. I ordered 1/2 lb of brisket and did not specify flat (lean) or point (fatty). I also ordered the Monster Beans. The sauce is on the side, and no meat comes sauced which I prefer. The brisket came and it was all flat. It looked well cooked but did not pass the pull-apart test. I did have to use my fork to cut through most of the pieces. The rub is something other than just salt and pepper. I couldn't put my finger on it due to the flavor of the Cherry and Oak Wood. I am so glad I ordered the Monster Beans. They were delicious! They were smoky, spicy and had a deep cooked-all-day flavor. The beans have pulled pork and brisket included; if I wasn't at the restaurant for a meal, I could easily enjoy the Monster Beans as an appetizer or snack by themselves.I had inquired if items on their menu were gluten free. I was suspect of the beans in particular as some BBQ restaurants cook their baked beans with beer. The chef in the back remarked "Everything on our menu is gluten free except the buns and mac & cheese.". I replied "Even the cornbread?" to which he replied "Also, the cornbread...not gluten free.". With this information I noticed when my tray arrived I had no white bread on my tray but others who ordered what I had ordered did have white bread. If you are gluten free, I suggest telling them to leave the bread off the tray.I will be returning to this restaurant.*UPDATE*I have eaten at this restaurant a 2nd time. I ordered the beans again and they remain my favorite item on the menu. I ordered the pulled pork and it was soft and did not have much flavor. There was some bark in the portion I received that had a faint salt and pepper taste to it but I didn't pick up anything else (mustard, garlic, onion, brown sugar, etc). Stopped here for lunch (nearby work).  Brisket sandwich was one of the best I've ever had.  Wish they had fries to go with it, as that would make it a new regular place.  Even mashed potatoes would be nice, but their only spud option is potato salad (nothing special).  Will work on a way to come here more often though.  Maybe stop at Culver's for fries on the way, and then here for a sandwich (to go though, obviously). Some of the best (if not the best) in Chicagoland!  Took my inlaws there (they are pretty picky about their BBQ), and it was worth every minute of the drive from downtown Chicago.   Brisket, ribs, pulled pork, slaw, beans, pig candy......delicious one and all!  Would recommend to even the most discerning BBQ eaters. OMG THIS FOOD IS FANTASTIC.  The owner Chris is absolutely nice, and made the experience 6 stars if I could put it.  the Pitmaster Juan is absolutely great at his job!. But talking about Smoked Meats this food tastes like it came out of Texas, Memphis  or somewhere other than Illinois  absolutely great! The Brisket is absolutely wonderful. Not only is the brisket wonderful, but the RIBS ARE INCREDIBLE NO SAUCE NEEDED.  The sausage, the pulled pork the chicken yes the chicken is absolutely incredible!  The macaroni and cheese is good, but the,ribs are simply Yummmmmmmmmmmmm.  The prices are absolutely reasonable and you get enough food my husband and I shared the sampler platter. We've been to Doc's twice - once right when they opened and just recently. Both times, the food and experience was very, very good, borderline excellent. The setup is great. Smaller place, super friendly staff, easy to understand menu and great options. Not sure where the owner found this staff - but he needs to give hiring lessons to the surrounding businesses!First time, we ordered one of almost everything (big family). Not a fan of the giant turkey leg. Taste was good - but I think it was more a novelty than real food. We're HUGE fans of the sausage - A+. Brisket is really, really good - solid A. Ribs we're maybe A-. Pig candy is beyond a grading scale!!! We sampled all the sides - and were great, but no standouts. We'd order each of them again.Second time, we got the basics, ribs, brisket, pulled pork, sausage, beans, pig candy and corn bread. Brisket = A+, Pulled Pork = solid A, Sausage = A+, Beans = solid A, Corn Bread = A. The only thing we were unhappy with was the ribs. We got two racks. First rack was not very decent. Was much better the second day after reheating in the oven. We moved to the second rack and it was MUCH better. So, I fear we just got a bad rack. The pig candy was not as crazy good as last time, but still a family favorite.I'd like to see Doc's move away from chicken or at least add smoked turkey breast.We have family in Plainfield, so we're accustomed to going to Sharko's maybe once a month. No more. Doc's brisket is clearly better. I also work up by Real Urban BBQ. Urban's brisket might be a bit better, Doc's pulled pork is better, but Urban has the best smoked turkey on the planet.If Doc's is holding their own against Urban in their first three months - they are a serious contender that deserves your patronage as they get settled in. Went with a group from work who raved about it and its worth it. Yes its electric smokers but this is plain, good bbq, they have sauce but its not on the meat. I got the platter, sausage is tender, moist, cut into bite size pieces. Beef is a little fatty but otherwise really good, not chewy and has real bark on it. Pork is done, maybe lacks a little moisture but not over the top like most places, good to dip in the sauce. Ribs were the best, had that little "tug" to them, plenty of bark, not over done, just right. Wings (my buddy shared), are amazing, flavor, good skin and you taste the smoke but don't choke on it. Try the pickles, nice with a little bite at the end. This is legit BBQ, better than I make it, goods atmosphere, just a plain place that knows what they are doing. More...

All the meats come unsauced so you put your own sauce on there which is perfect for me as some places put way too much and you can barely taste the spices or meat but not here!! Finally a great BBQ place in Romeoville ! My wife and I stopped in for dinner and we both got the sampler platter. The food was delicious,, great taste and enough to fill us both up. First time eating here and got the platter sampler, Mac n cheese and baked beans.  Everything was GREAT!!  It was nice being able to choose how much BBQ sauce you want and it's not automatically drenched with it.  The sausage and beef brisket were my favorite if I had to choose.  The sides were really good too!!!
