The most fun and educational cooking class I've been too. Chef Thierry and chef Rafael are skilled and knowledgeable - and funny! A great way to spend an evening learning about cooking fundamentals and traditions, solo or with a friend. Learned to make the best-tasting salmon I've ever had. Looking forward to my next class. I've been to two events at Cuisine et Chateau now, one hands on and one hands off. I loved them both! The evening itself was well organized, interesting and fun and I left feeling inspired and with lots of great tips.

A long overdue review from a fabulous seven days this past June 2017 in Bergerac, France with Thierry and Marnie, the most incredible hosts and owners from Cuisine et Chateau which is located in Calgary. Not sure what the English or French word is when your expectations are so exceeded that you that you wonder whether you were on the wrong trip or the price was a mistake. It was a seven day immersion into the French Country side and the answer to where the French get their passion for food, wine and life. OMG we saw truffles being dug, snails being raised and goats being milked for unpasteurized goat cheese. Then as expected, the very unexpected incredible food and wine tasting.

But lets start at the beginning. We invited 10 other ‘couple’ friends to join and the group stayed in a “real castle” complete with moat, turrets and over 600 years of history. Including the swimming pool and bikes this was our exclusive home for 7 days. The castle’s name is Château de Montastruc and is located very close to Bergerac which is the epicentre for foie gras, French liquor and quite frankly anything French that you can digest.

Each day Marnie and Thierry lead a variety of activities from real hands on cooking classes that taught the preparation of duck, rabbit, chocolate desserts and custards to chauffeuring us around the country side learning everything French. I now have the confidence to prepare foie gras and rabbit with the only limitation being finding it in Calgary.

A few other activities included going to a bakery to prepare croissants, having exclusive sommeliers give us a wine lesson and tasting and going to three small wineries to taste exclusive wines.

Breakfast, lunch and dinner were absolutely gourmet (always with amazing french bread that you will never find anywhere but France) and included exclusive and unique wines each evening. Digestives were unique and very interesting as well as tasty and directly from the region. One night we ventured out on a 20 minute journey to a starred Michelin restaurant that not only had incredible food and service but came with a 3 1/2 hour view over the valley.

So back to the beginning. I have traveled to over 50 countries and have made immersion in the culture a priority. I have definitely learned on this trip where the French passion for food and wine comes from and uniqueness of French nationalism. Besides the leadership of Marnie and Thierry, the support staff of Nicole and David kept the whole program at a superior level. Definitely recommend this trip.

A couple of items to think about to personalize your trip. Bring your own pillow if you don't like foam and if you like to have beer, wine or spirits outside their program bring it along and they will be happy to chill it. And also remember this is not a hotel but someone's home that you have taken over for a week.

What an incredible experience. I've been to other cooking classes but this one was wow! The chef was very good at explaining techniques and the reasons behind them. The 3 glasses of wine paired with each course was great. The cooking was made easy by having everything already portioned at your station. I love how we had made 8 things in one night! I would highly recommend the Italian course. If you are lucky the chef will call you up to even help! More...

I would highly recommend partaking in one of the courses offered, especially by Thierry. I had the opportunity to take the Cooking 101 series and it was always enjoyable, full of culinary pearls, laughter and delicious food paired with wine.

The atmosphere is lovely and clean, the staff is wonderful and very welcoming. Theirry and Marnie do a great job, and are really considerate for their clients.
