Chef Christian Bachman made a delicious lunch today at Bachman's Wholesome Catering Co. downtown. We ordered almost one of everything including dessert! I love that there was a large space for kids to explore in addition to the great food.

What’s your signature dish?

Although I prefer not to paint myself into a corner here, I would say that we provide exceptional charcuterie and cheese plates. I source local meets, imported cheeses, and pair them with my scratch-made pickles, house-dried fruits, house-made mustard, and nut medleys.

How do you go about creating the perfect menu for your clients?

We start with your needs. Quantity, Quality, Budget. From there we inquire about some of your favorite foods, or your vision for the table that will be set for your guests. We love making memorable occasions.

What do you love most about your job?

Working in the kitchen has humble roots. Servants of the castle were some of the original, formal, chefs. We believe that servitude and excellent hospitality go hand in hand. Of course I love my food, but the best moments in life are shared across a dining room table, and we love making that happen.

What inspired you to start your own business?

Being a Shasta County local, I got the best training available to me when I left highschool to begin an internship with a successful local chef. It set me up on a path, that allowed me to hone my skills and build my knowledge at an extended rate. I traveled to the wine country, and cooked in farm-to-table environments there. It was a marvelous experience. I came back home after a time, and had difficulty finding work that validated my passion for quality and hospitality, and decided to open up my own catering company. We never stop learning, getting better, enjoying, tasting.
