my signature dish changes with the seasons I like to use the best of local produce at the right times of the year to insure the best flavour reaches the plate
How do you go about creating the perfect menu for your clients?
I ask the customer for details on what they are looking for and then build a quote around what they want, I really am happy cooking any menu so long as the quality of the ingredients there I will be to
What do you love most about your job?
I love the ingredients most samphire, asparagus, cromer crabs, norfolk cheeses, you name it we are blessed for produce around norfolk
What inspired you to start your own business?
experience would be my first answer ive always seen myself doing my own thing but after 20 years tied to the stoves at some of norfolks finest eateries and working alongside norfolks finest chefs I felt ready and confident to take the next logical step in to catering
Why should our clients choose you?
your clients should choose who is best for them, I will look at any job and if its not something I'm comfortable with ie to big a job then i suggest someone who would be better suited. if its a job I would be confident in then the client would find my bespoke approach and vast experience to stand out from the rest
