10/10 recommend working with Castaway Cuisine for any food truck/cart related things!! I work for a manufacturing company and wanted to set up something nice for the plant employees in honor of Women's History Month. I figured what better way than to support a woman-owned business? I googled just that and came across Castaway. I filled out their interest form and immediately heard back from Barb, the owner. The company is run by her and her husband Mike, who is the chef. The other food truck companies I contacted never even got back to me. I did not have much experience setting things like this up so it was a bit bumpy on my end. Barb and Mike were incredibly patient and accommodating to my questions, date changes, etc. They came out and served food to our employees and were extremely self sufficient. I gave them my number to call/text if they needed anything and they had it all covered! They even collected the little vouchers I made for our employees to prevent double-dipping, which they did not have to do. After each event, they let me know how it went and about how many people showed up. Some of these events took place during lunch time and others in the evening so all of our shifts could attend. I was able to try the food myself and loved it! My favorite was probably the strawberry cream filled churros, but the tacos, salsa, guac, corn-- everything was so good. Food was delicious and Mike was a fun and friendly chef. Had them come out for a company picnic in October and am so glad that we did. Everyone loved the food and all the options available to choose from. The churros and chips/salsa were an added fun addition and were fantastic. Would 100% use their services again! I was lucky enough to indulge in Castaway Cuisine's delicious food on two separate occasions. First our HR department had them come out and serve our entire production plant lunch for our biannual safety lunch. The food was incredible and many of the employees mentioned it was by far the best luncheon we ever had. Then I was lucky enough to run into them again at a charity golf scramble. Chef Mike does a great job and the portions are fantastic. You can't beat the value and quality of Castaway Cuisine. I highly recommend them for your events or private part. More...

What’s your signature dish?
While I am experienced in creating dishes from just about every culture, my Island Tacos w/ Caribbean Beans & Coconut Fried Rice are most frequently requested.
How do you go about creating the perfect menu for your clients?
By listening and understanding the client's vision and budget, I am able to create a wonderful menu to exceed their expectations.
What do you love most about your job?
I am artistic and this is how I express my creativity.
What inspired you to start your own business?
From the very beginning, I have always wanted to own my own business. I have always been the innovator, overseer and driving force of restaurants and catering over my 30-year culinary career, making other's businesses successful. When COVID hit, my last employer showed their true colors, and it gave me the "kick in the pants" to go out on my own and live my dream.
